Skillet Nachos and Coconut Chocolate-Chip Cookies.


Tonight was one of those nights that by 5:30pm, I was too tired to walk, fold the clean laundry or make dinner.  Luckily, my freezer was stocked with a bag of cooked shredded pork and a log of coconut chip cookie dough.


Making Your Own Frozen Pizza

Our favorite meal of all time is pizza!  It takes time to make  pizza from scratch, so why not make 4-5 pizzas at once, bake one for dinner and place the other four in your freezer to serve later?  My hero Crystal Godfrey, with Everydayfoodstorage.net and I got together a few months ago to make a video on how to make  frozen pizza.  What a privilege it was to be with her for a few hours in her kitchen!


Stock your freezer with a Honey Glazed Spiral Ham

What I love even more then a  turkey at Thanksgiving dinner is a savory, honey-glazed, spiral cut ham.  This ham comes pre-sliced (and often with the glaze) so all you have to do is bake it and slice it into large pieces to enjoy right away and stock  in your freezer for later.   One 8-10 lb ham will give you 15-20 servings!

Pizza Stromboli

In our home, we love pizza! I grew up having homemade pizza every Saturday night.   As you know, pizza freezes extremely well and because of that, we have pizza one or two times a week. Sometimes it is fun to put a twist on the pizza recipe. A stromboli is basically a pizza rolled up. It tastes just as wonderful, but new textures and flavors are added. This recipe is also great for an easy lunch to take to work or an after school snack.
